This is truly so easy to make and only uses 1 pot!
This is a great last minute what are we going to have for dinner meals and much better than the box stuff! My kids don’t normally like homemade macaroni but they gobble this up!I’m giving you the doubled recipe for a family…I usually double the double recipe for my super sized family hence the large soup pot!
- 4 cups low fat or fat free milk
- 1 box elbow macaroni
- 2 tablespoons butter – optional
- 1 teaspoon mustard powder
- 1 teaspoon salt – can use more for seasoning later
- dash of nutmeg
- 2 cups grated cheese of your choice
Rinse macaroni in cold water. Place the milk, macaroni, butter, mustard powder, salt and nutmeg in a sauce pan. On medium heat slowly bring the mixture to a simmer stirring constantly so your macaroni doesn’t turn into a lump.
Once it comes to a simmer turn down to low heat. Stir frequently to cook the macaroni and absorb the milk evenly. Cook for 15-20 minutes until the milk has been fully absorbed. If macaroni is not fully cooked you can add a little more milk in small amounts until it macaroni is cooked.
Stir in your cheese until it melts. Turn off heat and cover for macaroni to become more plump and absorb any extra milk.
I sprinkle with bread crumbs but, there are lots of things you could add like bacon bits, tomatoes, parsley, hamburger or veggies.
